Today’s guide who will take us to the journey of the world of sweet treats is Chef Chatchai Homwan, Pastry Chef, who has more than 10 years of experience in pastry production. Chef Chatchai is mainly responsible for the production and quality control of all baked goods and pastries for meetings and internal parties, as well as hotels and restaurants in IMPACT Group. Currently, he is in charge of a team of 25 members, divided into two teams. The first team – Bakery and Pastry – is handling baked goods, cakes, cookies, and pastries. Meanwhile, the second team – Pastry Art and Special Decoration – is responsible for adding some colors and beauty to make teh pastries more tempting.
In terms of bakery production capacity, Chef Chatchai told us that before COVID-19, we could produce up to 2,500 – 4,000 pieces per day. However, during the spread of COVID-19, our capacity has been reduced to 800 – 1,200 pieces a day. Despite the decline in production, Chef Chatchai assures that both deliciousness, freshness, and ingredients are still the same quality. Moreover, customers can rest assured about hygiene and safety as the kitchen is certified with ISO 22000 Food Safety Management System (FSMS) standard.
